Oven toasted turnip

This is a strange one, I mandolin veges a lot and slow dry them in the oven for texture and sweetness, they also give a lovely autumn leaf look to a plate.  My latest discovery is turnip.  They (honestly) taste like truffle and actually look a bit like them too....

Turnips are very cheap here.  We are lucky to have abundant root vegetables at crazy low prices due to the use of them in both Indian and Middle Eastern cooking.  Beetroot too are ridiculously cheap and work beautifully when cooked on baking paper after getting cosy with the mandolin.
