Pork belly, smoked, braised, pressed, cooked skin side down with reduced dashi, crisp turnip, charred and crispy fennel ....
I cannot say enough how light this plate of food is/was. For pork belly to present itself this way? A revelation. The dashi broth, heady with smokey bonito and that subtle umami seaweed flavour kombu brings to the table,. The entire thing was a dream to eat. Yum. The crunch of fennel and dehydrated turnip? Superb. A complete and utter delight.
