Jura smoked sausage, onion puree, red cabbage and apple compote

These sausages are from the Jura mountains and are incredible.  Cured, smoked, using the best of the best....they've been making these the same way since the early 1800s (AOC of course).  Dense, sweet, salty fatty, smoky and utterly delicious.  A divine dinner with very little work.  yum.  I hate to imagine what these would cost outside of France!  They might not look like much, but trust me they are unreal.  seriously.
