Chicken

So, we started off with a gorgeous chicken.  Farm raised.  They dont come much better.  You might see a bit of scraching on the skin.  It's because I needed to remove the farm label from the actual meat.  It's quite serious here.....


So Andy had this idea to use a needle which we have copious amounts of due to my B12.

He removed the actual needle and we just use the injector to suck up the spice oil and paste  (Thai style with loads of lemon grass, kaffir, ginger, galangal, chilli...etc)


OMG.  We shoved so so so much flavour into this already beautiful chicken.It was something we've never experienced before. Every single morsel of the chicken even in the breast, had sucked up the gorgeous Thai flavours.  I guess you could call this a marinade on steroids.  It was unreal.

We served it with a celeriac, coriander and ginger pickle.  So fresh.  


It is simply impossible to see the flavours.  

They are pumped into the chicken.  

So, sort of impossible to really explain how bloody delicious this was.



We ate in the cave because today was so cold and rainy, all day.  Little Nudge took to his

bed before lunch and he stayed there.  He didn't move a wee muscle.  

Anyway, we learnt so much today. 

One can shove a shit load of flavour injecting.  Whether it's into meat or veg.  No waste.
