Vege mexican bake, in the cave....

We cooked a vege delicious dish (and I know you won't like it K because it included egg),  We sweated down onion with quite a bit of olive oil added rice like a risotto, then garlic and added lots of hot smoked paprika, ground cumin and ground coriander and cooked it off.  We added white wine and stock to deglaze. Then loads of cherry tomato (from the garden) a little tomato passata.  
Then last minute we popped in eggs and grated cheese and shoved it under the grill.  Fresh coriander from the garden, Et voila, served with charred flatbreads and salad.  In the cave, yummy scrummy yum.  

I loved being in my jammies these past 2 days.  Promise, back to normal on Sunday.
